How to Use a Vanilla Bean?

Vanilla is one of the most precious spices in the world, renowned for its rich and complex aroma that enhances the flavors of desserts, drinks, and even savory dishes. Here’s how to use a vanilla bean to get the most out of its flavor.

💡 Choosing a Good Vanilla Pod

First and foremost, it’s essential to choose a quality vanilla bean. A good bean should be supple, oily, slightly shiny, and plump to the touch. Avoid dry or brittle beans, as they contain less flavor. We recommend using our Grand Cru Bourbon Vanilla Beans, which represent the best of Madagascar’s harvest.

Preparing the Vanilla Bean

Step 1: Lay the Vanilla Bean Flat

On a cutting board or plate, lay the vanilla bean flat.

Step 2: Slice open the Vanilla Bean

With a sharp (non-serrated) knife, carefully split the pod lengthwise. Be sure to cut all the way through, so you end up with two separate vanilla halves.

Step 3: Scrape Out the Vanilla Seeds

Use the knife blade to scrape the black, fragrant seeds from inside the vanilla pod. These seeds hold the pure vanilla essence: vanillin. They’re also known as "Vanilla Caviar" or "Vanilla Supreme."


To scrape vanilla seeds:

  1. Lay half a vanilla bean flat, cut side up, to expose the seeds.
  2. Place the knife at the end of the half-pod, press down gently without cutting through the vanilla bean, then slide the knife to the other end. The vanilla seeds will collect on the blade. 
  3. Repeat the same process with the second half of the vanilla bean.

Using Vanilla Seeds

Vanilla seeds can be used directly in a wide variety of culinary preparations:


  • Creams and sauces: Add the seeds to custards, crème brûlées, or dessert sauces for a rich, natural flavor.
  • Pastries: Add them to cake batters, cookies, or muffins for a delicate fragrance.
  • Beverages: Mix the seeds into hot milk, cocktails, or smoothies for a sophisticated and authentic touch.

Use the remaining empty vanilla bean halves

Don’t throw away the split pods once you’ve scraped out the seeds! They’re still full of flavor and can be used in several ways:

  • Infusion: Add the empty pod to milk or cream to infuse and release even more flavor.
  • Vanilla sugar: Place the empty pod in a jar of sugar. In a few days, the sugar will absorb the vanilla’s aroma, creating homemade vanilla sugar perfect for baking.
  • Vanilla extract: Place several empty pods in a bottle of vodka or rum, let them infuse for a few weeks to make your own homemade vanilla extract.
  • Vanilla powder: Dry the empty pod in the oven at 40°C (104°F) for 1 hour to dehydrate it, then grind it into powder with a blender. We recommend having several empty pods for this rather lengthy process.
  • Infused rum: If you have a bottle of infused rum, you can add this empty pod to enhance its flavor, or create your own infused rum if you have several empty pods.
