Even though they’re sometimes used interchangeably in recipes, they’re not quite the same. If you really want to up your cooking game, it’s worth knowing the difference. Definitions

Natural vanilla extract is made by macerating vanilla beans in a mixture of alcohol and water. The authentic flavors of the vanilla beans are captured in this extract, making it a top choice for recipes that call for genuine flavor. 


Vanilla flavor is often used to describe a synthetic version of the extract. Artificial flavors, such as synthetic vanillin, may be present in the essence, mimicking the taste of vanilla without using real beans.

Production Process

Vanilla extract: The pods are picked, blanched, then fermented and dried. This process allows the natural vanillin—the main aromatic compound—to develop. Then, the vanilla pods are macerated in alcohol to extract the flavors.


Vanilla flavoring: Often produced from chemicals or artificial flavors like synthetic vanillin, vanilla essence is made through an industrial process far removed from the flavors nature provides. This can lead to a less refined, more cloying taste. However, its price is 10 times lower.

Culinary Uses

Vanilla extract is perfect for sweet recipes like cakes, ice creams, and sauces because of its concentration of natural flavors. Usually, just a small amount is enough to flavor your dish.   

The taste of liquid vanilla may differ from extract, even though it can be used in similar recipes. It’s often used in preparations where price is a key factor or when authentic flavor isn’t essential.


Basically, even though vanilla extract and vanilla flavoring might seem almost identical at first glance, the differences are hidden in their composition and how they’re made.
