Vanilla apple pie

Apple pie is one of my favorite childhood memories, I revisited it a bit by adding some vanilla seeds and it's done!

Ingredients

  • 6 apples
  • 1 shortcrust pastry case
  • 1 vanilla pod, Bourbon vanilla
  • 1 sachet of vanilla sugar or 10 g homemade vanilla sugar
  • 1 tbsp rum vanilla extract
  • 30 g butter

Directions

  1. Peel the apples. Turn three of them into a compote: put them in a pan with a large glass of water. Once the apples soften, stir in the vanilla sugar. Add a little more water if needed. It doesn't matter if a few pieces of apple remain once the compote is done.
  2. Meanwhile, thinly slice the other three apples and put them in a bowl. Split the vanilla pod lengthways, scrape out the seeds and mix them through the apples. You can also add 1 tsp of vanilla sugar. Add the tablespoon of vanilla extract and stir the apples with a wooden spoon until the vanilla seeds are evenly distributed. Don't throw the pod away – drop it into your homemade vanilla extract or your jar of vanilla sugar!
  3. Preheat the oven to 190 °C. Line a tart tin with the pastry and prick the base with a fork. Spread the apple compote over it. Arrange the apple slices in a circle, or however you like. Dot the butter over the apples.
  4. Bake for around 30 minutes, until the apples have caramelised.Lovely served warm with custard or a scoop of vanilla ice cream. Enjoy!
